French Tarragon has a strong aniseed flavour and so a little goes a long way. Add chopped tarragon to poultry, pork, beef, fish, egg and vegetable dishes. Delicious sprinkled on salads or added to white sauce, soups, dips and vinaigrette. A particular favourite is Chicken & Tarragon - chunks of chicken breast cooked in a creamy tarragon white sauce, either on the hob or in the oven. Or simply cut a pocket into a chicken breast, stuff with chopped tarragon, brush the chicken breast with oil, season with salt and pepper, and then grill or oven bake until the meat is cooked. Tasty!
